SWEET RECIPES — CHOCOLATE LOG WITH QUAKER CRUNCHY BITES
INGREDIENTS
200 g Quaker crunchy bites (plain granola)
220 g dark chocolate, chopped
100 ml fresh milk or unsweetened plant-based drink
50 g cocoa powder, sifted, plus extra for serving
70 g dark sugar
20 ml cognac
100 g smooth peanut butter (or another nut butter such as almond or hazelnut butter)

- Prepare the chocolate logs. Place the Quaker crunchy bites in a bowl.
- In a stainless steel bowl, add thecouverture chocolate and milk (or plant-based drink) and melt them over a bain-marie.
- Stir gently until the couverture chocolate melts and forms a smooth mixture. Remove from heat and leave the bowl over the hot water for a while.
- Add the sugar, stir until dissolved, then remove from the bain-marie. Add cocoa, cognac, and peanut butter, and mix well until combined.
- Pour the chocolate mixture into the bowl with the Quaker crunchy bites and mix gently with a spatula to combine the ingredients into a single thick mixture.
- Transfer the final mixture onto baking paper, shape it into a cylinder, and roll tightly.
- Refrigerate the roll for 6 hours. To serve, unwrap the parchment and slice into pieces. You can wrap them in foil or serve them on a plate dusted with cocoa.
