SWEET RECIPES — SOFT OAT COOKIES WITH APPLE AND CINNAMON
INGREDIENTS
300 g Quaker oats
2 tsp cinnamon
¼ tsp grated nutmeg
½ tsp baking soda
A pinch of salt
120 g butter of your choice, at room temperature
75 g dark sugar
75 g brown sugar
1 egg (or 1 tbsp flaxseed for the vegan version)
1 tsp vanilla extract
1 large apple

- Place half of the Quaker oats (150 g) in a food processor and blend until powdered. Transfer the oat flour to a bowl and add the whole Quaker oats (150 g), cinnamon, nutmeg, baking soda, and salt, and mix well.
- In another bowl, add the butter and 2 sugars and beat well with a hand mixer for 2–3 minutes. Add the egg and vanilla and beat for another 1–2 minutes. For the vegan version of the cookies with flaxseed, see the veganize it! tip below.
- Add the dry mixture to the wet one and stir with a spatula until well combined.
- Peel the apple (don’t cut it earlier to prevent browning). Grate half of it finely and chop the other half into very small pieces. Add the grated apple and half the chopped pieces into the mixture, mixing gently by hand or with a spoon. Keep the remaining pieces aside.
- Shape equal-sized balls (about 35 g each), place them on a baking tray lined with parchment paper, and flatten them slightly. Distribute the remaining apple pieces on top and press them lightly into the dough.
- Bake in a well-preheated oven at 180°C (fan) for 16–17 minutes. Remove from the oven, let cool for 5 minutes, then transfer to a wire rack to cool completely..
*For the vegan version, replace the egg with a flaxseed substitute: mix 1 tbsp ground flaxseed with 2 ½ – 3 tbsp water and let it sit for a few minutes..
