QUAKER AND MUSHROOM PATTIES

INGREDIENTS

(for 8 patties)
¾ cup Quaker oats
1 finely chopped onion
1 cup finely chopped mushrooms
200ml low fat milk
Salt & pepper
3-4 tbsp chopped fresh coriander
2 small chopped green peppers

    RECIPE

    1. Heat a non-stick frying pan and sauté the onion until soft and golden.

    2. Add the mushrooms and sauté for a further 2 minutes.

    3. Add the oats and the milk, mixing continuously. Continue cooking until the mixture unsticks from the sides of the frying pan. Add salt and pepper and remove from the heat.

    4. Add the coriander and the pepper. Mix well and let the mixture cool down.

    5. Shape the mixture into 7- 8 long narrow patties and bake them for 10- 15 minutes, turning them over after the first 5 minutes.

    6. Serve hot with ketchup and toasted bread.
