SAVOURY MUFFINS WITH PARMEZAN CHEESE

INGREDIENTS

1 cup powdered Quaker oats
1 cup wholegrain flour
¾ cup grated parmesan cheese
1 tsp baking powder
1 cup milk
¼ cup olive oil
2 eggs
3 tbsp chopped chives or parsley
½ tsp ground white pepper (or other spices)

    RECIPE

    1. Preheat the oven to 180 degrees Celsius.

    2. In a bowl, beat the eggs with the milk and olive oil. Gradually add the rest of the ingredients, mixing until smooth.

    3. Fill the muffin cups up to ¾ full and add a little more grated cheese over each one.

    4. Bake for 20-25 minutes until golden brown and let them cool down for 5 minutes.

    5. Remove from the cups. Let muffins come to room temperature and enjoy.
