HONEY, LEMON AND GINGER OAT COOKIES
INGREDIENTS
1 cup Quaker oats
3 tbsp all-purpose flour
1 tsp cinnamon
1 tsp salt
1 tsp freshly grated ginger
Zest of 1 lemon
2 tbsp honey
1 tbsp olive oil
2 tbsp milk of your choice
1 tbsp instant coffe
RECIPE
1. Preheat the oven to 180 degrees Celsius.
2. Put all the ingredients in a medium-sized bowl and mix until they form sticky dough.
3. Knead a little and form a ball.
4. Put the dough ball on greaseproof paper, cover with more greaseproof paper and roll with a rolling pin.
5. Remove the top sheet of greaseproof paper, use the rim of a glass to cut the rolled out dough in circles.
6. Line a baking tray with greaseproof paper, place the cookies on it and bake for 20 to 25 minutes until golden brown.
7. Let the cookies come to room temperature before serving.
