CHOCOLATE COOKIES WITH OATS AND GINGER
INGREDIENTS
225g unsalted butter
100g honey
200g soft brown sugar
150g flour for all uses
2 tbsp. baking powder
1 tbsp. salt flakes
4 tbsp. grated ginger
2 tbsp. cinnamon
400g Quaker oats
2 beaten eggs
50g sweet ginger conserve, chopped
115g dark chocolate
RECIPE
- Heat the oven at 180ο C
- Put greaseproof paper on 2 baking pans
- Melt the butter with the honey in a pot in low heat and let it cool.
- Mix sugar, flour, baking powder, salt and herbs.
- Add Quaker oats and mix again
- Add the melted butter and honey, mix again, add the beaten eggs and the ginger.
- Use a teaspoon to split the mix on the baking pans leaving some space in between
- Bake for 8 – 10 minutes and let them cool
- Melt the chocolate in bain marie
- Dip the cold cookies in the chocolate and place them on a surface until the chocolate is frozen.
