SALMON PATTIES

INGREDIENTS

400g pink salmon, drained, skin and bones removed
3/4 Cup Quaker Oats
1/3 Cup Skim Milk
1 egg, slightly beaten
1 tbsp onion, chopped
1 tbsp dill, chopped or 1 tsp dill, dried
ΒΌ tsp salt (optional)

Sauce

1/2 Cup Plain Non-fat Yogurt
1/3 Cup tomato, chopped
1/3 Cup cucumber, chopped
1 tbsp onion, chopped
1 tbsp dill, chopped or 1 tsp dill, dried

    RECIPE

    1. In small bowl, combine sauce ingredients; mix well. Cover and chill while making salmon patties.
    2. In medium bowl, combine ingredients for salmon patties; mix well. Let stand 5 minutes. Shape into 6 oval patties.
    3. Lightly spray large non-stick pan with cooking spray. Cook salmon patties over medium heat 3 to 4 minutes on each side or until golden brown and heated through.
    4. Serve with sauce.
