SWEET RECIPES — OAT CAKE WITH WALNUTS AND CHOCOLATE

INGREDIENTS

300 g Quaker oats
200 g brown sugar
20 g baking powder
A pinch of salt
150 g milk
3 whole eggs + 2 egg whites
60 g olive oil
30 g orange juice
3 tsp orange zest
100 g chocolate chips
100 g walnuts

  1. Place the oats and brown sugar in a blender and blend well for 4–5 minutes.
  2. Add the baking powder and blend for another 10 seconds to mix.
  3. In a bowl, combine all the wet ingredients: the eggs, egg whites, milk, olive oil, juice, and orange zest.
  4. Add the cinnamon.
  5. Mix thoroughly with a whisk.
  6. Then add the dry ingredients to the wet mixture.
  7. Add the chocolate chips and walnuts, mixing well.
  8. Pour the batter into a 10x44 cm loaf pan two 10x22 cm pans.
  9. Bake in a preheated oven at 170°C for 50 minutes. In the last 20 minutes, cover with foil to prevent over-browning.
